Guacamole Dip
1 ripe avocado 2 tbsp. olive oil 2 tbsp. fresh lime juice ½ tsp. garlic powder ½ tsp. kosher salt (or to taste) ¼ tsp. ground cumin ¼ cup fresh cilantro leaves, minced 6 grape tomatoes, diced (optional)
Directions:
Slice the avocado lengthwise, in half, and remove the pit. Scoop out the fruit into a mixing bowl. Add the olive oil, lime juice, garlic powder, kosher salt, and cumin. Mash with a fork, until mixed well and desired consistency is achieved. Stir in the diced tomatoes and cilantro, and serve with fried corn tortillas.
