Mom’s All Purpose Flour Blend

My gluten-free, all purpose flour blend is perfect for baking, frying, and thickening. Use it as you would use any all purpose wheat flour, in any recipe.
Thoroughly sift all the following ingredients together. Store in a tightly closed container until ready to use. Once sifted, this recipe yields a little over 7 cups.
3 cups sorghum flour
2 cups tapioca starch
2 cups potato starch
2 tsp. xanthan gum
